Partenaires dans la vie comme dans les affaires, Andrés et Sabrina ont fondé Ara Chocolat en 2015 à Paris, forts d'une passion commune pour le cacao de leur Venezuela natal. Rapidement, ils se sont positionnés comme l'un des pionniers du mouvement bean-to-bar en France, et comme le premier chocolatier torréfacteur du 9ème arrondissement de Paris. Life and business partners, Andrés and Sabrina founded Ara Chocolat in Paris in 2015, driven by a shared passion for the cacao of their native Venezuela. They quickly established themselves as one of the pioneers of the bean-to-bar movement in France, and as the first chocolatier-roaster in Paris's 9th arrondissement.

Né à Caracas, Andrés grandit avec une passion dévorante pour la cuisine. Très jeune, il intègre l'un des grands hôtels 5 étoiles de la capitale vénézuélienne, où il affine sa technique et sa rigueur. Avide d'horizons nouveaux, il part ensuite en Angleterre pour travailler dans des restaurants étoilés Michelin de Londres — des maisons où l'excellence n'est pas une option. Born in Caracas, Andrés grew up with a consuming passion for cooking. At a young age he joined one of the great five-star hotels of the Venezuelan capital, honing his technique and discipline. Hungry for new horizons, he then moved to England to work in Michelin-starred restaurants in London — kitchens where excellence is non-negotiable.

Le moment qui a tout changé The moment that changed everything
En 2006, lors d'un voyage sur la côte de Paria, au Venezuela, Andrés découvre pour la première fois des cacaoyers dans leur environnement naturel. Ce moment est une révélation. La beauté de l'arbre, la complexité de la fève, le potentiel aromatique infini caché dans chaque cabosse — tout s'illumine. Il comprend que c'est là que se joue l'essentiel : avant la tablette, avant l'atelier, il y a la fève. Et la fève a une âme. In 2006, during a trip to the Paria coast in Venezuela, Andrés encounters cacao trees in their natural environment for the first time. The moment is a revelation. The beauty of the tree, the complexity of the bean, the infinite aromatic potential hidden in each pod — everything becomes clear. He understands that this is where it all begins: before the bar, before the workshop, there is the bean. And the bean has a soul.
De retour en Angleterre, il se forme à l'art chocolatier. Puis en 2008, il retourne au Venezuela pour apprendre le bean-to-bar dans sa forme la plus authentique — de la fève torréfiée à la tablette façonnée, en maîtrisant chaque étape du processus. Dans son atelier à Paris, une photo d'une plage des Caraïbes est accrochée au mur : elle lui rappelle chaque jour d'où vient tout ça. Back in England, he trains as a chocolatier. Then in 2008, he returns to Venezuela to learn bean-to-bar in its most authentic form — from roasted bean to finished bar, mastering every step of the process. In his Paris workshop, a photo of a Caribbean beach hangs on the wall: a daily reminder of where it all began.

In 2015, armed with a career as demanding as it is passionate, Andrés and Sabrina found Ara Chocolat in Paris. Their vision: to create a bean-to-bar house that respects the grower, reveals the terroir, and offers a unique sensory experience. From the very first years, international awards multiply — testament to an excellence that owes nothing to chance.

Nous choisissons des variétés de cacao anciennes, natives et rares — celles qui racontent un terroir, une histoire, une culture. Chaque tablette est un voyage sensoriel en Amérique Centrale et du Sud. Nous encourageons les producteurs à protéger et à replanter ces variétés, patrimoine vivant du cacao mondial. We choose ancient, native and rare cacao varieties — the ones that tell a story of terroir, history and culture. Every bar is a sensory journey through Central and South America. We encourage growers to protect and replant these varieties, a living heritage of the world's cacao.
Pour sublimer nos cacaos d'exception, nous choisissons des ingrédients français et bio : olives tanche de Nyons, prunes d'Agen, mirabelles, noisettes, amandes… Des saveurs du terroir français qui entrent en dialogue avec les arômes du cacao d'Amérique Latine. To enhance our exceptional cacaos, we choose French and organic ingredients: Nyons tanche olives, Agen prunes, mirabelles, hazelnuts, almonds… Flavours of French terroir in dialogue with the aromas of Latin American cacao.
100% vegan, notre atelier est alimenté par une énergie 100% renouvelable via un fournisseur coopératif local. Nos emballages sont compostables. Nos cacaos sont cultivés en agroforesterie, avec des méthodes respectueuses des écosystèmes. Parce que le bon chocolat ne doit rien coûter à la planète. 100% vegan, our workshop runs on 100% renewable energy through a local cooperative supplier. Our packaging is compostable. Our cacao is grown using agroforestry, with methods that respect ecosystems. Because great chocolate shouldn't cost the planet anything.
